Preparation

  • Wash the tomatoes thoroughly, remove stems, and cut into quarters or slices based on your recipe.
  • Heat olive oil in a pan over medium heat; add chopped onions and minced garlic, sautéing until soft and fragrant.

Cooking

  • Add the chopped tomatoes to the pan and stir gently to combine with the onions and garlic.
  • Season the mixture with salt and pepper, and add a pinch of sugar if desired.
  • Cook the tomatoes for 15-20 minutes, stirring occasionally until they break down and develop a richer flavor.
  • Add vegetable broth if a thinner consistency is preferred.
  • In the last few minutes of cooking, toss in fresh herbs.
  • Remove from heat when the tomatoes reach desired texture, and sprinkle cheese on top if using.
