  • 3 tablespoons extra virgin olive oil
  • 1 large onion, chopped
  • 2 cloves garlic, crushed
  • 2 cans 14.5 ounce chopped tomatoes
  • 0.25 teaspoon red pepper flakes or to taste
  • 2 teaspoons balsamic vinegar
  • 2 teaspoons white sugar
  • 0.75 cup basil leaves, torn into pieces
  • Salt and ground black pepper to taste

Preparation

  • Heat the olive oil in a skillet over medium heat until warm but not smoking.
  • Add the chopped onion and crushed garlic; sauté for about five minutes until tender and fragrant.
  • Pour in the chopped tomatoes with their juices and stir to combine.
  • Add the red pepper flakes, balsamic vinegar, and white sugar, adjusting the seasoning to taste.

Cooking

  • Increase the heat to bring the mixture to a boil, then reduce to low heat and let it simmer for 45 to 60 minutes, stirring occasionally.
  • As the sauce nears completion, tear the basil into smaller pieces and stir into the sauce, allowing it to wilt.
  • Season with salt and ground black pepper to taste, adjusting ingredients as needed.

Notes

Use high-quality canned tomatoes or fresh tomatoes when in season. Letting the sauce simmer longer can enhance the flavors.
