Soup Base

  • 4 cups chicken or vegetable broth Use a quality broth to enhance flavor.
  • 1 stalk lemongrass, sliced Fresh lemongrass is preferred.
  • 3-4 kaffir lime leaves
  • 3-4 slices galangal (or ginger) Galangal adds authentic flavor.

Main Ingredients

  • 200 g shrimp, peeled and deveined Can substitute with other seafood.
  • 200 g mushrooms, sliced
  • 2-3 Thai bird chilies, smashed Adjust according to spice preference.
  • 2 tablespoons fish sauce
  • 1 tablespoon lime juice Freshly squeezed is best.

Garnish

  • to taste cilantro leaves For freshness.

Instructions
 

Preparation

  • Pour the chicken or vegetable broth into a pot and bring it to a boil over medium-high heat.
  • Add the sliced lemongrass, kaffir lime leaves, and galangal to infuse the broth with aroma and let it simmer for about five minutes.

Cooking

  • Introduce the shrimp and mushrooms into the simmering broth and cook until the shrimp is pink and tender.
  • Stir in the smashed Thai bird chilies, fish sauce, and lime juice, adjusting for taste.

Serving

  • Ladle the soup into bowls, distributing the shrimp, mushrooms, and broth evenly.
  • Garnish with fresh cilantro leaves and serve immediately.

Notes
