Instructions
Drain the tofu and wrap it in a paper towel. Place it under a heavy plate for 10 minutes to remove excess moisture.
Preheat the oven to 400°F (200°C).
Cut the tofu into 8 strips, coat with soy sauce, and sprinkle with cornstarch. Place on a lined baking sheet.
Bake for 10 minutes, then flip and bake for an additional 5 minutes until golden and crispy.
In a blender, combine the avocado, garlic, lemon juice, salt, and pepper. Blend until smooth.
Spread avocado sauce on each tortilla. Add baked tofu strips, diced tomato, cucumber, and romaine lettuce.
Wrap the tortilla, folding in the sides and rolling upwards to secure the filling.
Serve immediately or store in the refrigerator for up to 2 days.
