Ingredients
  

  • 175 g firm tofu
  • 1 Tbsp. soy sauce
  • 1 Tbsp. cornstarch
  • 1 whole avocado
  • 3 cloves garlic
  • 2 tsp. lemon juice
  • Salt and pepper (to taste)
  • 3 large flour tortillas
  • 1 medium tomato (diced)
  • ¼ whole cucumber (diced)
  • 3 handfuls romaine lettuce (chopped)

Instructions
 

  • Drain the tofu and wrap it in a paper towel. Place it under a heavy plate for 10 minutes to remove excess moisture.
  • Preheat the oven to 400°F (200°C).
  • Cut the tofu into 8 strips, coat with soy sauce, and sprinkle with cornstarch. Place on a lined baking sheet.
  • Bake for 10 minutes, then flip and bake for an additional 5 minutes until golden and crispy.
  • In a blender, combine the avocado, garlic, lemon juice, salt, and pepper. Blend until smooth.
  • Spread avocado sauce on each tortilla. Add baked tofu strips, diced tomato, cucumber, and romaine lettuce.
  • Wrap the tortilla, folding in the sides and rolling upwards to secure the filling.
  • Serve immediately or store in the refrigerator for up to 2 days.
