  • 1 block extra firm tofu (14 oz) Press to remove moisture
  • 1/2 cup vegan mayo
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon basil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup panko breadcrumbs
  • 1 cup shredded vegan mozzarella For topping
  • to taste Marinara sauce For topping

Instructions
 

Preparation

  • Preheat the oven to 450°F (425°F for metal bakeware).
  • Slice the block of extra firm tofu into six equal pieces and press to remove excess moisture for about 10 minutes.

Coating

  • In a medium-sized bowl, mix together the vegan mayo, garlic powder, onion powder, basil, salt, and black pepper.
  • Place panko breadcrumbs in a separate bowl. Dredge each piece of pressed tofu in the mayo mixture, then coat with panko breadcrumbs.

Baking

  • Lightly grease a baking dish and arrange the coated tofu slices in a single layer.
  • Bake in the preheated oven for about 20 minutes, until the breading is golden brown and crispy.

Final Touches

  • Remove from the oven, spoon marinara sauce over the tofu slices, and sprinkle with shredded vegan mozzarella.
  • Return to the oven for 10 minutes, until the cheese is hot and melty.

Serving

  • Allow to cool for a couple of minutes, then serve with extra marinara sauce on the side.

Notes
