  • 2 medium sweet potatoes, peeled and cubed
  • 1 medium apple, peeled and grated
  • 1/2 cup whole wheat flour
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1 large egg
  • 2 tablespoons olive oil, for frying

Preparation

  • Boil the sweet potatoes in a pot of water until tender, about 15-20 minutes. Drain and let them cool slightly.
  • Mash the cooked sweet potatoes with a fork until smooth.
  • Add the grated apple, flour, spices, salt, and egg to the bowl. Mix until combined.
  • Form small patties with your hands, about 2 inches in diameter.

Cooking

  • Heat the olive oil in a frying pan over medium heat.
  • Cook the patties in batches, about 3-4 minutes on each side, until golden brown.
  • Transfer cooked patties to a paper towel-lined plate to absorb any excess oil.
  • Allow the patties to cool for a few minutes before serving.
