Ingredients
  

For the cookies

  • 1 cup all-purpose flour
  • 1 cup almond flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 tablespoon brewed coffee, cooled
  • 1/3 cup cocoa powder

For the filling

  • 1/2 cup mascarpone cheese
  • 1/4 cup powdered sugar
  • 1 teaspoon espresso powder
  • Chocolate shavings or cocoa powder, for garnish

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a medium bowl, whisk together the all-purpose flour, almond flour, baking powder, and salt. Set this aside.
  • In a larger mixing bowl, cream the softened butter and granulated sugar together until light and fluffy.
  • Add the egg and mix well, followed by the vanilla extract and cooled brewed coffee. Combine until smooth.
  • Gradually incorporate the flour mixture into the wet ingredients, mixing until well-combined.
  • Scoop tablespoon-sized portions of dough onto the prepared baking sheet, spacing them about 2 inches apart.

Baking

  • Bake the cookies for 12-15 minutes, or until lightly golden around the edges. Let them cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Filling

  • In another bowl, mix the mascarpone cheese, powdered sugar, and espresso powder until smooth and creamy.
  • Spread a generous layer of the mascarpone mixture between two cookies to create a sandwich. Repeat until all cookies are filled.
  • Dust the cookies with cocoa powder or sprinkle chocolate shavings on top for an extra touch of elegance.

Notes
