  • 2 cups crushed pineapple (with juice)
  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 1/2 cup packed brown sugar
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1/2 cup shredded coconut (optional)
  • 1/2 cup chopped nuts (optional)
  • Whipped cream or ice cream for serving (optional)

Instructions
 

Preparation

  • Preheat your oven to 350°F (177°C). Grease a 9x13-inch baking dish and set aside.
  • In a large bowl, mix together the melted butter, granulated sugar, and brown sugar until well combined.
  • Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  • In a separate bowl, combine the flour, baking powder, and salt. Gradually add this mixture to the wet ingredients, mixing until just combined.
  • Fold in the crushed pineapple (with juice), shredded coconut, and chopped nuts if using. Make sure everything is evenly incorporated.
  • Pour the batter into the prepared baking dish and spread it out evenly.

Baking

  • Bake in the preheated oven for 30 to 35 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.

Serving

  • Allow the dish to cool slightly before serving. You can serve it warm or let it cool completely.
