In a large skillet, brown the ground beef with the chopped onion and minced garlic over medium-high heat. Drain excess grease after cooking.
Add taco seasoning and salsa to the meat mixture. Stir to combine and let simmer for about 5 minutes, adding water as needed.
While the meat is cooking, poke holes in each sweet potato with a fork. Cook them in the microwave for 8-10 minutes, turning halfway through, until soft.
Once the sweet potatoes are cooked, let them cool slightly and then slice them lengthwise. Fluff the insides with a fork to create a pocket.
Fill each sweet potato with the taco meat mixture, then top with your choice of cheese, diced tomatoes, avocado, or sour cream.
