Ingredients
  

  • 1 lb. lean ground beef
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 packet taco seasoning
  • 1 cup chunky salsa
  • 1/4-1/2 cup water as needed
  • 4 medium sweet potatoes (about 12-14 ounces each)
  • 1 cup shredded Mexican blend cheese optional
  • 1 cup diced tomatoes optional
  • 1 cup diced avocado or guacamole optional
  • 1/2 cup sour cream optional

Instructions
 

  • In a large skillet, brown the ground beef with the chopped onion and minced garlic over medium-high heat. Drain excess grease after cooking.
  • Add taco seasoning and salsa to the meat mixture. Stir to combine and let simmer for about 5 minutes, adding water as needed.
  • While the meat is cooking, poke holes in each sweet potato with a fork. Cook them in the microwave for 8-10 minutes, turning halfway through, until soft.
  • Once the sweet potatoes are cooked, let them cool slightly and then slice them lengthwise. Fluff the insides with a fork to create a pocket.
  • Fill each sweet potato with the taco meat mixture, then top with your choice of cheese, diced tomatoes, avocado, or sour cream.
  • Serve immediately and enjoy your Taco Stuffed Sweet Potatoes!
