Taco Bell Mexican Pizza

Ingredients
  

Tortillas and Beans

  • 8 pieces small flour tortillas For the base of the pizza
  • 1 can (15 oz) refried beans

Beef Mixture

  • 1 lb ground beef Can be substituted with turkey or chicken for a different flavor
  • 1 packet taco seasoning For flavoring the beef
  • 1/2 cup water For mixing with seasonings

Cheese and Sauce

  • 1 1/2 cups shredded cheddar cheese
  • 1 1/2 cups shredded Monterey Jack cheese
  • 3/4 cup taco sauce

Fresh Toppings

  • 1/2 cup diced tomatoes
  • 1/4 cup diced red onions
  • 1/3 cup sour cream
  • 1/4 cup chopped fresh cilantro

Miscellaneous

  • Vegetable oil For frying the tortillas

Instructions
 

Preparation

  • Start by lightly frying or baking the flour tortillas until they’re golden and crispy. If frying, drain each one on paper towels to get rid of excess oil.
  • In a skillet over medium heat, cook the ground beef until browned and fully cooked, breaking it apart as it cooks. Drain off any excess fat.
  • Return the skillet with the beef to the heat and add the taco seasoning and water. Stir well and let it simmer for a few minutes until combined.

Assembly

  • Grab a baking sheet and lay down one crispy tortilla. Spread a generous layer of refried beans over it.
  • On top of the beans, add the seasoned beef mixture and then place another crispy tortilla on top.
  • Spread taco sauce over the second tortilla and sprinkle both the shredded cheddar and Monterey Jack cheeses on top.

Cooking

  • Preheat your oven to 400°F (200°C) and bake the pizza for about 8 to 10 minutes until the cheese melts and bubbles.
  • Remove the pizza from the oven and top it off with diced tomatoes, red onions, sour cream, and chopped cilantro.

Serving

  • Cut the pizza into quarters or sixths and serve hot. Consider a toppings bar for extra fun.

Notes

Store leftovers in an airtight container in the refrigerator for 3 to 4 days. Reheat in the oven to maintain crispiness.
