Ingredients
  

For the Sweet Potato Base

  • 4 medium sweet potatoes Look for firm sweet potatoes free of blemishes.

For the Filling

  • 1 can black beans, drained and rinsed Can be substituted with other beans if preferred.
  • 1 cup corn, canned or frozen
  • 1 cup cherry tomatoes, halved
  • 1 medium red bell pepper, diced
  • 1 medium avocado, diced Add just before serving for freshness.
  • 1 cup shredded lettuce For topping.
  • ½ cup diced red onion
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • to taste Salt and pepper
  • Fresh cilantro, for garnish
  • Lime wedges, for serving Enhances flavor when served.

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C).
  • Wash the sweet potatoes thoroughly. Pierce each potato several times with a fork to allow steam to escape.
  • Place the sweet potatoes on a baking sheet and bake for 45-60 minutes, or until tender when pierced with a fork.

Filling Preparation

  • In a large bowl, combine the black beans, corn, cherry tomatoes, diced bell pepper, and red onion.
  • Add cumin, chili powder, salt, and pepper to the mixture. Stir well to combine and set aside.

Assembly

  • Once the sweet potatoes are cooked and cool enough to handle, cut each potato in half lengthwise.
  • Scoop out a portion of the flesh to create space for the filling, leaving enough to maintain the shape.
  • Fill each sweet potato half with the bean and corn mixture, pressing down gently to pack it in.
  • Top with diced avocado and shredded lettuce.
  • Garnish with fresh cilantro and serve with lime wedges on the side.

Notes
