Ingredients
  

  • 2 medium sweet potatoes cut into 1/4 inch slices
  • 3 Tbsp olive oil
  • 1 tsp sea salt
  • 1 tsp paprika
  • 5 oz goat cheese
  • 1/2 cup walnuts roasted
  • 1/3 cup dried cranberries
  • 2 Tbsp balsamic reduction
  • 3 Tbsp honey

Instructions
 

  • Preheat your oven to 450°F (230°C).
  • In a small mixing bowl, combine olive oil, sea salt, and paprika.
  • Toss the sliced sweet potatoes in the paprika mixture until evenly coated.
  • Line a baking sheet with parchment paper and spread the sweet potato slices in a single layer.
  • Roast the sweet potatoes for about 8 to 10 minutes on each side, until golden and crispy.
  • While the sweet potatoes are roasting, crumble the goat cheese and chop the walnuts.
  • Once the sweet potatoes are done, transfer them to a serving plate.
  • Top each round with goat cheese, walnuts, and dried cranberries.
  • Drizzle honey and balsamic reduction over the top before serving.
