goat cheese

Instructions
Preheat your oven to 450°F (230°C).
In a small mixing bowl, combine olive oil, sea salt, and paprika.
Toss the sliced sweet potatoes in the paprika mixture until evenly coated.
Line a baking sheet with parchment paper and spread the sweet potato slices in a single layer.
Roast the sweet potatoes for about 8 to 10 minutes on each side, until golden and crispy.
While the sweet potatoes are roasting, crumble the goat cheese and chop the walnuts.
Once the sweet potatoes are done, transfer them to a serving plate.
Top each round with goat cheese, walnuts, and dried cranberries.
Drizzle honey and balsamic reduction over the top before serving.
