  • 2 medium sweet potatoes, peeled and diced
  • 1 cup quinoa, rinsed Rinse to remove bitterness
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 can (15 ounces) diced tomatoes
  • 1 medium bell pepper, chopped
  • 1 medium onion, chopped
  • 3 cloves garlic, minced Use fresh for better flavor
  • 4 cups vegetable broth
  • 1 tablespoon olive oil
  • 2 teaspoons chili powder
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)
  • Avocado slices for serving (optional)

Instructions
 

Cooking

  • Heat olive oil in a large pot over medium heat.
  • Add chopped onion, bell pepper, and garlic; sauté until softened, about 5-7 minutes.
  • Stir in chili powder, cumin, smoked paprika, salt, and pepper; cook for another minute.
  • Add diced sweet potatoes and rinsed quinoa; stir well to combine.
  • Pour in vegetable broth and bring to a boil.
  • Once boiling, reduce heat to low, cover pot, and let simmer for about 20-25 minutes, until sweet potatoes are tender and quinoa is cooked.
  • Stir in black beans and diced tomatoes; warm through for another 5 minutes.
  • Taste and adjust seasoning if necessary, adding more salt or pepper as desired.
  • Serve hot, garnished with fresh cilantro and avocado slices if using.

Notes

Rinse quinoa before cooking to eliminate bitterness. Adjust spices to your preference, and consider blending partially for a creamier texture.
