Ingredients
  

For the Puffs

  • 5 medium sweet potatoes, boiled and peeled Look for firm and smooth sweet potatoes.
  • 3 large egg whites
  • 1/2 teaspoon pumpkin pie spice or cinnamon (optional) Use for added flavor.
  • 1/2 teaspoon salt
  • 5-6 cups Cinnamon Pecan Cereal (or other high fiber flake cereal) This will give a crunchy texture.
  • 12 large marshmallows
  • Zero calorie butter spray For coating.
  • Salt to taste

Preparation

  • Preheat your oven to 350°F (175°C).
  • Line a cupcake tray with cupcake wrappers.
  • Poke the sweet potatoes with a knife or fork, then boil them in salted water for 25-30 minutes until tender. Let them cool before peeling.
  • In a mixing bowl, mash the sweet potatoes thoroughly until smooth.
  • Add egg whites, salt, and optional spices into the mashed sweet potatoes. Blend well until uniform.
  • In a shallow dish, coat the Cereal with zero-calorie butter spray.
  • Take a scoop of the sweet potato mixture, flatten it, place a marshmallow in the center, wrap and form a ball. Roll each ball in the cereal coating.
  • Place the coated puff into the lined cupcake tray, creating an indent on top.
  • Bake in the preheated oven for 20-25 minutes until golden.
  • Remove from oven and cool slightly before serving.

Notes
