Ingredients
  

  • 2 cups mashed sweet potatoes (approximately 1 large or 2 medium sweet potatoes)
  • 1 cup brown rice flour
  • 1 tsp. baking powder
  • 1/2 tsp. salt
  • Toppings of your choice e.g., cheese, vegetables, herbs

Instructions
 

  • Prepare the sweet potatoes by placing them in an Instant Pot, covering with water, and cooking on high manual for 10 minutes. Release pressure and cool.
  • Preheat your oven to 375°F (190°C) and prepare a pizza pan with parchment paper.
  • In a mixing bowl, combine mashed sweet potatoes, brown rice flour, baking powder, and salt. Mix to form a soft dough.
  • Shape the dough into a pizza crust on the prepared pan, spreading it evenly.
  • Poke holes in the crust with a fork to prevent bubbling, then bake for 15 minutes.
  • Add your desired toppings and bake for an additional 15 to 17 minutes, until the cheese is melted and bubbly.
  • Remove from oven, let cool slightly, slice, and serve warm.
