Ingredients
  

  • 1 single crust pie pastry
  • 1 lb sweet potatoes
  • 1/2 cup butter, softened
  • 14 oz sweetened condensed milk
  • 2 tsp orange zest
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp salt
  • 2 large eggs, lightly beaten

Instructions
 

  • Prepare the sweet potatoes by boiling, baking, or microwaving until tender. Peel and mash them in a bowl.
  • Preheat your oven to 350°F (175°C).
  • Fit the pie crust into a 9-inch pie pan and refrigerate while preparing the filling.
  • In a mixing bowl, combine the mashed sweet potatoes with softened butter until creamy.
  • Add sweetened condensed milk, orange zest, cinnamon, nutmeg, and salt. Mix until smooth.
  • Stir in the lightly beaten eggs until fully incorporated.
  • Pour the sweet potato filling into the chilled pie crust and spread evenly.
  • Bake on the bottom rack for 50-55 minutes, or until a toothpick inserted in the center comes out clean.
  • Let the pie cool at room temperature, then refrigerate until ready to serve.

Notes
