Instructions
Prepare the sweet potatoes by boiling, baking, or microwaving until tender. Peel and mash them in a bowl.
Preheat your oven to 350°F (175°C).
Fit the pie crust into a 9-inch pie pan and refrigerate while preparing the filling.
In a mixing bowl, combine the mashed sweet potatoes with softened butter until creamy.
Add sweetened condensed milk, orange zest, cinnamon, nutmeg, and salt. Mix until smooth.
Stir in the lightly beaten eggs until fully incorporated.
Pour the sweet potato filling into the chilled pie crust and spread evenly.
Bake on the bottom rack for 50-55 minutes, or until a toothpick inserted in the center comes out clean.
Let the pie cool at room temperature, then refrigerate until ready to serve.
