Ingredients
  

For the Pancakes

  • 1 medium sweet potato
  • 1 cup milk
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon vanilla extract
  • 1 large egg
  • 1 cup whole wheat flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt

For Serving

  • 2 medium bananas sliced
  • 1 cup low-fat vanilla yogurt for serving
  • 4 tablespoons pure maple syrup for serving

Instructions
 

Preparation

  • Cook the sweet potato until it's tender by boiling or baking. Mash it until you have about 1/2 cup.
  • In a blender, combine the mashed sweet potato, milk, cinnamon, vanilla extract, and egg. Blend until smooth.

Mixing Dry Ingredients

  • In a separate bowl, whisk together the whole wheat flour, baking powder, and salt.
  • Slowly pour the sweet potato blend into the flour mixture and stir until just combined.

Cooking The Pancakes

  • Preheat a griddle over medium heat and lightly grease it with cooking spray.
  • Pour about 1/4 cup of batter onto the griddle for each pancake. Cook until bubbles form, about 2-3 minutes.
  • Flip the pancakes and cook for an additional 2-3 minutes until golden brown.

Serving

  • Transfer pancakes to a plate and serve warm with sliced bananas, yogurt, and maple syrup.

Notes

For variety, you can add berries or chopped nuts to the batter or try different spices like cardamom and ginger. Cool completely before storing leftovers in an airtight container.
