  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Preparation

  • Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • Boil the cubed sweet potatoes in water for about 10-15 minutes, or until they are tender.
  • Drain the sweet potatoes and let them cool for a few minutes.
  • In a large mixing bowl, mash the sweet potatoes until smooth. Ensure no lumps remain.
  • Add the egg to the mashed sweet potatoes and mix well.
  • Stir in the breadcrumbs, grated Parmesan cheese, garlic powder, paprika, salt, and black pepper until everything combines nicely.
  • Shape the mixture into small nuggets, roughly the size of a golf ball, and place them on the prepared baking sheet.
  • Lightly spray the nuggets with cooking spray or drizzle with olive oil to promote crispiness.

Baking

  • Bake in the preheated oven for 20-25 minutes, flipping halfway through, until they are golden brown and crispy.
  • Remove the nuggets from the oven and let them cool slightly before serving.
