(about 2 medium-sized)

Instructions
Peel sweet potatoes and slice them into matchstick-sized fries, about ¼ inch thick.
Soak the fries in cold water for at least 30 minutes (or overnight) to remove excess starch.
Preheat your oven to 425°F (220°C) and line two baking sheets with parchment paper.
Drain and dry the sweet potato fries thoroughly using paper towels.
In a small bowl, mix cornstarch, garlic powder, chili powder, and black pepper.
Toss sweet potato fries with oil, then add the spice mixture and coat evenly.
Spread fries out on the baking sheets in a single layer without crowding.
Bake for 15 minutes, flip with a spatula, and return to the oven for another 12-15 minutes until golden brown and crispy.
While fries bake, mix mayonnaise, ketchup, Worcestershire sauce, and paprika to create the dipping sauce.
Once fries are done, sprinkle with sea salt and parsley, then serve hot with the dipping sauce.
