Ingredients
  

Cake Ingredients

  • 2 cups mashed sweet potatoes Use firm sweet potatoes for best flavor
  • 1 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 1/2 cup vegetable oil
  • 4 large eggs
  • 2 teaspoons vanilla extract
  • 3 cups all-purpose flour Measure accurately for best results
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon salt
  • 1 cup chopped pecans or walnuts Optional, toast for extra flavor

Glaze Ingredients

  • 1/2 cup powdered sugar
  • 2 tablespoons milk

Cinnamon Swirl

  • 1/2 cup brown sugar
  • 1 tablespoon cinnamon
  • 1 tablespoon melted butter

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking pan.
  • In a large mixing bowl, combine the mashed sweet potatoes, granulated sugar, brown sugar, and vegetable oil. Mix well until smooth.
  • Add the eggs and vanilla extract to the sweet potato mixture. Stir until fully combined.
  • In another bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  • Gradually add the dry ingredients to the wet ingredients, mixing just until combined. If desired, fold in the chopped pecans or walnuts.
  • Pour half of the batter into the prepared pan and spread it evenly.
  • In a separate bowl, prepare the cinnamon swirl by mixing together 1/2 cup of brown sugar, 1 tablespoon of cinnamon, and melted butter. Sprinkle this mixture over the batter in the pan.
  • Pour the remaining batter on top and gently spread to cover the cinnamon mixture. Use a knife to swirl the layers together for added marbling.

Baking

  • Bake in the preheated oven for 30-35 minutes or until a toothpick inserted into the center comes out clean.

Glazing

  • While the cake cools, prepare the glaze by mixing the powdered sugar and milk in a small bowl until smooth.
  • Drizzle the glaze over the cooled cake before slicing and serving.
