  • 1 cup cooked sweet potatoes (mashed) Use Yukon Gold or orange-fleshed sweet potatoes for best results.
  • 1 cup dark chocolate chips Dairy-free if preferred.
  • 1/2 cup coconut milk Or any preferred plant-based milk.
  • 1/4 cup maple syrup Or honey.
  • 1 teaspoon vanilla extract
  • a pinch salt
  • 1/4 teaspoon cinnamon Optional for extra flavor.

Preparation

  • Start by cooking the sweet potatoes until they are soft. You can either bake, steam, or boil them until tender. Allow them to cool before mashing.
  • In a microwave-safe bowl, melt the dark chocolate chips. Heat in 30-second intervals, stirring in between, until fully melted and smooth.
  • In a large mixing bowl, combine the mashed sweet potatoes, melted chocolate, coconut milk, maple syrup, vanilla extract, salt, and cinnamon. Blend until the mixture is smooth and creamy.
  • Taste the mixture and adjust the sweetness if necessary by adding more maple syrup.
  • Spoon the mousse into individual serving dishes or a large bowl. Cover with plastic wrap and refrigerate for at least 2 hours, or until set.
  • Before serving, you can top the mousse with fresh fruit, nuts, or a dollop of whipped cream.

Notes

For presentation, consider using small glass cups or elegant ramekins. Top each mousse with fresh berries or chopped nuts to enhance flavor and aesthetics. The mousse can be stored in the refrigerator for up to five days or frozen for two months. Allow it to sit at room temperature for 20 to 30 minutes after freezing for best texture.
