Ingredients
  

Vegetables

  • 1 large sweet potato, peeled and diced
  • 1 medium head cauliflower, chopped into florets
  • 1 onion, diced
  • 2 cloves garlic, minced

Liquids

  • 4 cups vegetable broth
  • 1 cup coconut milk (or another plant-based milk)

Seasonings

  • 2 tablespoons olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • to taste Salt and pepper
  • to taste Fresh herbs for garnish (such as cilantro or parsley, optional)

Cooking

  • Heat the olive oil in a large pot over medium heat. Add the diced onion and cook for about 5 minutes until it becomes soft and translucent.
  • Stir in the minced garlic, cumin, and smoked paprika. Cook for an additional 1-2 minutes until the spices fragrance the air.
  • Add the diced sweet potato and chopped cauliflower to the pot. Stir well to coat the vegetables in the oil and spices.
  • Pour in the vegetable broth, bringing the mixture to a gentle boil. Reduce heat to a simmer and cover the pot. Let it cook for about 20-25 minutes or until the sweet potatoes and cauliflower are tender.
  • Use an immersion blender to puree the soup until it reaches your desired level of smoothness. Alternatively, transfer the soup in batches to a stand blender.
  • Stir in the coconut milk, salt, and pepper to taste. Allow the soup to heat through for a few more minutes.
  • Serve hot, garnished with fresh herbs if desired.
