  • 2/3 cup orange juice concentrate For a hint of citrus flavor.
  • 1/2 cup packed dark brown sugar Can be adjusted according to taste.
  • 1-1/2 teaspoons ground cinnamon Gives warmth to the spread.
  • 1 teaspoon ground nutmeg Adds a cozy flavor.
  • 1/4 to 1/2 teaspoon ground cloves Adjust according to taste preference.

Preparation

  • Peel and dice the sweet potatoes and apples into smaller pieces.
  • In a heavy saucepan, combine diced sweet potatoes, diced apples, and water. Mix well.

Cooking

  • Bring the mixture to a boil over medium heat, then reduce to a simmer.
  • Keep the pot uncovered and simmer for about 120 to 135 minutes, stirring occasionally.
  • Aim for a thickened mixture with about 1 cup of liquid remaining, then remove from heat.
  • Allow the mixture to cool slightly before transferring it to a blender.
  • Blend in batches until smooth and creamy.
  • Return the sweet potato butter to jars or containers, and chill in the refrigerator for at least 2 hours before serving.
