Preheat your oven to 400°F (200°C). Peel and dice the sweet potatoes into bite-sized pieces.
In a large bowl, toss the diced sweet potatoes with avocado oil, garlic powder, onion powder, salt, and pepper until evenly coated.
Spread the sweet potatoes on a lined baking sheet and roast for about 30-40 minutes, stirring halfway through.
While the sweet potatoes are baking, heat a large skillet over medium heat with a drizzle of oil. Add the ground beef and cook until browned, about 8 minutes.
Stir in Worcestershire sauce, garlic powder, onion powder, salt, and pepper. Mix well and cook for an additional minute.
In a small bowl, combine mayo, ketchup, mustard, apple cider vinegar, onion powder, and season with salt and pepper to taste to prepare the special sauce.
Assemble your Sweet Potato Burger Bowl: start with shredded lettuce, followed by roasted sweet potatoes and seasoned beef.
Top with red onion, diced tomatoes, pickles, and drizzle with special sauce.
Serve immediately and enjoy!
