Ingredients
  

  • 1 lb. lean ground beef
  • 2 tsp. Worcestershire sauce
  • ½ tsp. garlic powder
  • ½ tsp. onion powder
  • ½ tsp. salt
  • ¼ tsp. pepper
  • 4 small sweet potatoes
  • 1 Tbsp. avocado oil
  • ½ tsp. garlic powder (for sweet potatoes)
  • ½ tsp. onion powder (for sweet potatoes)
  • ¼ tsp. salt (for sweet potatoes)
  • ¼ tsp. pepper (for sweet potatoes)
  • 1 bag shredded lettuce
  • 1 medium red onion thinly sliced
  • 1 pint diced tomatoes
  • ½ cup pickles diced
  • cup mayo for special sauce
  • 2 Tbsp. ketchup for special sauce
  • 1 Tbsp. mustard for special sauce
  • 1 tsp. apple cider vinegar for special sauce
  • ½ tsp. onion powder for special sauce
  • to taste salt and pepper for special sauce

Instructions
 

  • Preheat your oven to 400°F (200°C). Peel and dice the sweet potatoes into bite-sized pieces.
  • In a large bowl, toss the diced sweet potatoes with avocado oil, garlic powder, onion powder, salt, and pepper until evenly coated.
  • Spread the sweet potatoes on a lined baking sheet and roast for about 30-40 minutes, stirring halfway through.
  • While the sweet potatoes are baking, heat a large skillet over medium heat with a drizzle of oil. Add the ground beef and cook until browned, about 8 minutes.
  • Stir in Worcestershire sauce, garlic powder, onion powder, salt, and pepper. Mix well and cook for an additional minute.
  • In a small bowl, combine mayo, ketchup, mustard, apple cider vinegar, onion powder, and season with salt and pepper to taste to prepare the special sauce.
  • Assemble your Sweet Potato Burger Bowl: start with shredded lettuce, followed by roasted sweet potatoes and seasoned beef.
  • Top with red onion, diced tomatoes, pickles, and drizzle with special sauce.
  • Serve immediately and enjoy!
