Ingredients
  

  • 2 medium Sweet Potatoes peeled and cubed
  • 1/2 cup Almond Flour
  • 1/4 cup Cocoa Powder
  • 1/4 cup Maple Syrup
  • 1/4 cup Coconut Oil melted
  • 2 large Eggs
  • 1 tsp Vanilla Extract
  • 1/2 tsp Baking Powder
  • 1/4 tsp Sea Salt
  • 1/4 cup Chocolate Chips optional

Instructions
 

  • Preheat your oven to 350°F (175°C). Grease an 8x8-inch baking dish or line it with parchment paper.
  • Peel and cube the sweet potatoes. Roast or boil them until soft, then mash until smooth.
  • In a large mixing bowl, combine the mashed sweet potatoes, melted coconut oil, maple syrup, eggs, and vanilla extract. Stir until smooth.
  • Add the almond flour, cocoa powder, baking powder, and sea salt to the wet mixture. Mix until fully combined. If using chocolate chips, fold them into the batter.
  • Pour the batter into the prepared baking dish and spread it out evenly. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
  • Let the brownies cool for about 10 minutes in the pan, then transfer them to a wire rack to cool completely before slicing.

Notes

Feel free to swap any of the topping in the ingredient list with whatever you have lying around. It will probably taste just as amazing!
