  • 1 cup mashed sweet potato (from 1-2 medium-sized sweet potatoes)
  • 1/2 cup creamy all-natural peanut butter
  • 1/3 cup real maple syrup
  • 1 1/2 teaspoons vanilla extract
  • 1/2 teaspoon cinnamon
  • 2 tablespoons coconut flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup chocolate chips optional: additional chocolate chips for topping

Preparation

  • Preheat your oven to 350°F (175°C).
  • Prepare an 8” x 8” baking tin by lightly greasing it and lining the bottom with parchment paper.
  • Pierce sweet potatoes with a fork and microwave for about 3-5 minutes until fork-tender, then cool and mash them. Alternatively, boil peeled sweet potatoes for 10-12 minutes.

Mixing

  • In a bowl, combine peanut butter, maple syrup, vanilla extract, and cinnamon until smooth.
  • Add the mashed sweet potato, coconut flour, baking powder, and salt, stirring until well combined.
  • Fold in chocolate chips.

Baking

  • Spread the batter in the prepared baking tin and sprinkle more chocolate chips on top if desired.
  • Bake for 30-35 minutes until a toothpick inserted comes out clean.
  • Allow to cool completely before cutting and serving.

Notes

For better flavor, choose firm, smooth-skinned medium-sized sweet potatoes. Let blondies cool completely before slicing for cleaner cuts. Serve warm with ice cream or at room temperature with a sprinkle of powdered sugar for presentation.
