  • 2 medium sweet potatoes, peeled and diced Choose firm sweet potatoes without blemishes.
  • 1 can black beans, drained and rinsed
  • 1 can diced tomatoes Include juices for more flavor.
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 medium bell pepper, chopped (any color)
  • 2 cups vegetable broth
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste Adjust based on your preference.
  • 1 tablespoon olive oil Use for sautéing.

Instructions
 

Preparation

  • Heat the olive oil in a large pot over medium heat.
  • Add the chopped onion and bell pepper, and cook until they soften, about 5 minutes.
  • Stir in the minced garlic, chili powder, cumin, and smoked paprika. Cook for an additional minute until fragrant.
  • Add the diced sweet potatoes, diced tomatoes (with their juices), and vegetable broth to the pot. Stir well to combine.

Cooking

  • Bring the mixture to a simmer. Cover the pot and cook for about 20-25 minutes, or until the sweet potatoes are tender.
  • Stir in the black beans and cook for another 5 minutes to heat through.
  • Season with salt and pepper to taste, adjusting based on your preference.

Serving

  • Serve hot, and don’t forget to add your favorite toppings.
