Sweet Potato Bites

Delightful mini treats made with sweet potatoes, topped with marshmallows and pecans, perfect as appetizers or side dishes.

Ingredients
  

  • 2 large sweet potatoes or yams (peeled and sliced into 1/4-inch rounds)
  • 2 Tbsp. butter
  • 2 Tbsp. maple syrup
  • 1/2 tsp. ground cinnamon
  • 12 large marshmallows (halved)
  • 24 pecans (or candied pecan halves)

Instructions
 

  • Preheat your oven to 400°F (200°C).
  • Grease a sheet pan with nonstick cooking spray.
  • In a small bowl, combine butter, maple syrup, and ground cinnamon. Microwave for about 30 seconds or until melted, then stir to blend.
  • In a large bowl, toss the sweet potato rounds with the melted butter mixture until evenly coated.
  • Arrange the coated sweet potato rounds on the prepared sheet pan.
  • Bake in the preheated oven for about 20 minutes, or until tender.
  • Switch to broil and top each sweet potato round with a halved marshmallow. Broil for 1-2 minutes until marshmallows are golden brown.
  • Press a pecan half into the top of each toasted marshmallow.
  • Serve immediately while warm.
