  • 1 cup coconut milk Use for a creamy texture.

Spices

  • 1 teaspoon ground cumin Adjust to fit your taste.
  • 1 teaspoon ground ginger Increase for extra warmth.
  • 1 teaspoon cinnamon
  • Salt and pepper to taste

Cooking Ingredients

  • 2 tablespoons olive oil For sautéing.
  • Fresh herbs (like parsley or cilantro) for garnish Optional, for a pop of color.

Preparation

  • Heat the olive oil in a large pot over medium heat.
  • Add the chopped onion and sauté until it turns translucent, about 5 minutes.
  • Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.
  • Add the cubed sweet potatoes to the pot, along with the ground cumin, ginger, and cinnamon. Stir well to coat.

Cooking

  • Pour in the vegetable broth and bring to a boil.
  • Reduce heat to a simmer and cook for about 20-25 minutes, or until sweet potatoes are tender.
  • Use an immersion blender to purée the soup until completely smooth or blend half for a chunkier texture.
  • Stir in the coconut milk and season with salt and pepper to taste.
  • Heat the bisque for an additional 5 minutes until warmed through.
  • Serve hot, garnished with fresh herbs.

Notes
