  • 2 pounds boneless, skinless chicken thighs or breasts Fresh or frozen
  • 1 cup pineapple chunks Canned or fresh
  • 1/2 cup soy sauce
  • 1/2 cup brown sugar
  • 1/4 cup ketchup
  • 1 tablespoon minced garlic
  • 1 teaspoon ground ginger
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes Optional for heat
  • 1/4 cup green onions, chopped For garnish
  • Cooked rice for serving

Instructions
 

Preparation

  • Begin by placing the chicken in the bottom of your crockpot.
  • In a medium bowl, mix together the pineapple chunks (with their juice), soy sauce, brown sugar, ketchup, minced garlic, ground ginger, black pepper, and red pepper flakes if using. Stir until well combined.
  • Pour the sauce over the chicken in the crockpot, ensuring the chicken pieces are well coated.

Cooking

  • Cover the crockpot and cook on low for 6 to 8 hours or on high for 3 to 4 hours, or until the chicken is fully cooked and tender.
  • When done, shred the chicken directly in the crockpot using two forks or serve whole for a rustic presentation.
  • Stir the shredded chicken into the sauce and let it absorb the flavors for about 10 minutes before serving.

Serving

  • Serve over cooked rice and garnish with chopped green onions.

Notes
