  • 4 boneless, skinless chicken breasts Opt for high-quality chicken breasts for the best flavor.
  • 1 cup pineapple juice
  • 1/2 cup brown sugar Adjust for sweetness to taste.
  • 1/3 cup soy sauce
  • 1 can crushed pineapple in juice, undrained (8 oz)
  • 1 teaspoon minced garlic Fresh garlic is preferred.
  • 1/2 teaspoon ground ginger Fresh ginger can enhance the flavor.

  • 2 tablespoons cornstarch For thickening the sauce.
  • 2 tablespoons water To create a slurry with cornstarch.

Instructions
 

Preparation

  • Begin by placing the chicken breasts at the bottom of your slow cooker. Make sure they fit snugly but aren’t overcrowded.
  • In a small mixing bowl, combine the pineapple juice, brown sugar, soy sauce, crushed pineapple, minced garlic, ground ginger, salt, and pepper. Stir well until the sugar dissolves.
  • Carefully pour the pineapple mixture over the chicken breasts. Use a spoon to ensure all the chicken gets coated.

Cooking

  • Cover your slow cooker with its lid and set it to low heat. Cook the chicken for 6 to 7 hours or on high for 3 to 4 hours. It’s done when the chicken is tender enough to shred with a fork.
  • Once cooked, remove the chicken from the slow cooker and set it aside on a plate. In a small bowl, whisk together the cornstarch and water until smooth. Pour this slurry into the slow cooker and stir into the sauce. Cook on high for another 10 to 15 minutes to thicken the sauce.

Final Touches

  • After thickening, return the chicken to the slow cooker, allowing it to soak up the delicious sauce one last time. You can either shred it or keep the pieces whole based on your preference.
  • Serve your Sweet Hawaiian Crockpot Chicken over rice or noodles, drizzled with extra sauce, and garnish with sliced green onions and sesame seeds.
