  • 2 lb chicken chunks (white or dark meat, or a combination) Cut into chunks for even cooking.
  • 1 cup pineapple juice
  • 1/4 cup brown sugar, firmly packed
  • 1/3 cup soy sauce Low sodium variant is great.
  • 1 medium can pineapple chunks Enhances tropical flavor.
  • 1 small onion, chopped
  • 1 medium green pepper, cut into chunks

Instructions
 

Preparation

  • If your chicken isn’t already cut into chunks, cut it into chunks to ensure even cooking and better saucing.
  • In a mixing bowl, combine the pineapple juice, brown sugar, and soy sauce. Stir until the brown sugar fully dissolves.

Cooking

  • Place chicken chunks in the slow cooker, followed by the chopped onion, green pepper, and pineapple chunks.
  • Pour the sauce mixture over the chicken and vegetables, ensuring they are well-coated.
  • Cover and cook on low for 5-6 hours or on high for 2-3 hours.
  • After cooking, gently stir the mixture to coat the chicken and vegetables with sauce. It’s now ready to serve!

Notes

Serve over rice or noodles. Garnish with green onions or sesame seeds for added flavor and presentation. For better taste, marinate chicken in the sauce beforehand. Adjust sweetness and thickness according to preference.
