Ingredients

  • 2 lb baby carrots Fresh, high-quality
  • 1/2 tsp salt
  • 1/2 tsp ground cinnamon Feel free to experiment with other spices
  • 1/4 cup packed light brown sugar Adjust based on sweetness preference
  • 1/4 cup pure maple syrup Use fresh syrup for richer flavor
  • 1/3 cup butter, cut into cubes Melts during cooking

Instructions
 

Preparation

  • Wash the baby carrots thoroughly under running water.
  • You can leave them whole or cut them in half based on preference.

Mixing

  • In a large bowl, combine the salt, ground cinnamon, brown sugar, and maple syrup.
  • Stir well until everything is mixed.

Layering in the Crockpot

  • Place the carrots at the bottom of your crockpot.
  • Pour the syrup mixture over the carrots, ensuring they are well-coated.
  • Distribute the butter cubes evenly on top.

Cooking

  • Cover the crockpot and set it to cook on low for 6 to 8 hours or on high for 3 to 4 hours.
  • Stir the mixture a couple of times during cooking for even coverage.

Finishing

  • Once cooking is done, check the carrots for tenderness; they should be easily pierced with a fork.
  • If desired, leave them in the cooker for an extra 15 minutes on high without the lid for caramelization.
  • Serve warm, drizzled with the remaining glaze.

Notes

Add toasted nuts or fresh herbs for added flavor. Store leftovers in an airtight container in the refrigerator for up to 3-4 days. Reheat gently with a splash of water or syrup if needed.
