Ingredients
  

Base Ingredients

  • 1 ¼ cups pineapple juice (freshly blended from cored and diced pineapples)
  • 1 ½ cups granulated sugar
  • ½ cup apple cider vinegar or rice vinegar Use rice vinegar for a milder taste

Flavoring Ingredients

  • 1 teaspoon soy sauce (or tamari for gluten-free option)
  • 5 units fresh birds eye chilies (minced, or 2 tablespoons chili flakes) Adjust according to heat preference
  • 2 tablespoons minced garlic
  • 1 teaspoon salt
  • 2 tablespoons cornflour Used to thicken the sauce
  • 4 tablespoons water Used for the cornflour slurry

Instructions
 

Preparation

  • Combine 1 ¼ cups pineapple juice and 1 ½ cups sugar in a deep pan.
  • Add ½ cup vinegar, minced garlic, and chilies to the mixture.

Cooking

  • Set the burner to high heat and bring the mixture to a boil.
  • Once boiling, reduce heat and let it simmer for about 5 minutes.
  • Mix 2 tablespoons of cornflour with 4 tablespoons of cold water in a separate bowl to create a slurry.
  • Gradually whisk the cornflour slurry into the sauce while stirring continuously to avoid lumps.
  • Cook for an additional 3 to 5 minutes, until the sauce thickens.
  • Turn off the heat and let the sauce cool completely before transferring it to airtight jars.

Notes
