Instructions
Prepare the chicken by cooking it if not using pre-cooked. Shred or dice it into bite-sized pieces.
In a bowl, mix the shredded chicken with sweet chili sauce until well coated.
Wash and prepare all the vegetables: shred the lettuce, chop the carrots, and slice the cucumber and red onion.
Lay a tortilla flat. If using mayonnaise or Greek yogurt, spread a thin layer on the tortilla.
Layer the shredded lettuce, sweet chili chicken, carrots, cucumber, onion, avocado, cheese, cilantro, lime juice, and season with salt and pepper.
Fold the sides of the tortilla over the filling, then roll tightly from the bottom to the top to secure.
Slice the wrap in half and serve immediately, or wrap in foil for later.
