  • 2 pounds boneless, skinless chicken breasts or thighs Choose thighs for more moisture and flavor.
  • 1 cup Sweet Baby Ray's barbecue sauce Adjust sauce quantity to taste.
  • 1/2 cup chicken broth
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon paprika
  • 1/2 teaspoon black pepper
  • Salt to taste
  • Optional: sliced green onions for garnish

Preparation

  • Chop the onion and mince the garlic. If using chicken breasts, trim any excess fat.
  • Place the chicken breasts or thighs in the bottom of the crockpot.
  • In a separate bowl, mix together the Sweet Baby Ray's barbecue sauce, chicken broth, minced garlic, chopped onion, paprika, black pepper, and a pinch of salt.
  • Pour the barbecue sauce mixture over the chicken in the crockpot, ensuring that the chicken is well-coated.

Cooking

  • Cover and cook on low for 6 to 8 hours or on high for 3 to 4 hours, until the chicken easily shreds with a fork.
  • Remove the chicken from the crockpot and shred it using two forks.
  • Return the shredded chicken to the crockpot, stirring it into the sauce, and allow it to soak for about 10 minutes before serving.
