Ingredients
  

For the Meatballs

  • 1 lb lean ground beef Can substitute with ground turkey or chicken.
  • 1/2 cup breadcrumbs Panko breadcrumbs can be used for a crunchier texture.
  • 1 large egg
  • 1/4 cup finely chopped onion
  • 2 cloves garlic, minced

For the Sweet and Sour Sauce

  • 1 cup ketchup
  • 1/4 cup low-sodium soy sauce Can use coconut aminos for a gluten-free option.
  • 1/4 cup pineapple juice
  • 2 tbsp brown sugar

Instructions
 

Preparation

  • In a large mixing bowl, combine the lean ground beef and breadcrumbs.
  • Add the egg, chopped onion, minced garlic, and sprinkle with salt and pepper to taste. Mix gently until just combined.
  • Shape the mixture into 1-inch meatballs and place them on a tray.

Making the Sauce

  • In another bowl, whisk together ketchup, soy sauce, pineapple juice, and brown sugar until well combined.

Cooking

  • Layer the meatballs into the crockpot evenly.
  • Pour the sweet and sour sauce over the meatballs, stirring gently to coat.
  • Cook on low for about 4 hours or on high for 2 hours. Avoid lifting the lid during cooking.

Serving

  • Serve the meatballs warm, ideally paired with fluffy rice or noodles.
  • Garnish with chopped green onions or sesame seeds for added freshness.

Notes

For leftover meatballs, store them in an airtight container in the fridge for 3-4 days or freeze them for up to 3 months. Thaw and reheat when ready to enjoy.
