Ingredients
  

For the Chicken

  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces Use fresh chicken for the best texture.
  • 1 cup all-purpose flour
  • 2 large eggs Beaten for coating.
  • 1 cup breadcrumbs For a crunchy coating.
  • 1 tablespoon vegetable oil Drizzle over chicken for crispiness.

For the Sweet and Sour Sauce

  • 1 cup sugar Adds sweetness.
  • 1 cup apple cider vinegar Provides tang.
  • 1/2 cup soy sauce
  • 1 teaspoon cornstarch Used for thickening the sauce.
  • 1/4 cup water

Vegetables

  • 1 cup pineapple chunks, drained
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 1 small onion, chopped

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • In a shallow bowl, place the flour. In another bowl, beat the eggs. In a third bowl, add the breadcrumbs.
  • Dip each piece of chicken in the flour, then the eggs, and finally the breadcrumbs, ensuring they are well-coated.

Baking

  • Place the coated chicken on the baking sheet and drizzle vegetable oil over the top.
  • Bake the chicken bites for 15-20 minutes, flipping halfway through until they are golden and cooked through.

Making the Sauce

  • In a saucepan over medium heat, combine sugar, apple cider vinegar, soy sauce, cornstarch, and water. Stir until the mixture begins to thicken, about 5 minutes.
  • Add the pineapple, bell peppers, and onion to the saucepan. Cook for an additional 5 minutes until the vegetables soften.

Combining

  • Combine the baked chicken with the sweet and sour sauce in a large bowl. Toss until coated.
  • Serve hot and enjoy.

Notes

For an extra kick, add red pepper flakes to the sauce. Store leftovers in an airtight container. Freeze for longer storage.
