Instructions
Preheat your oven to 400°F (200°C).
Lightly grease a roasting pan with olive oil.
Season the chicken thighs with salt, pepper, and paprika.
In a small bowl, whisk together the fresh orange juice, soy sauce, honey, minced garlic, and olive oil.
Arrange the sliced oranges in the roasting pan, then place the seasoned chicken thighs on top.
Pour the marinade over the chicken and oranges. Sprinkle fresh thyme over the top.
Roast in the oven for about 25-30 minutes, until the chicken is golden and cooked through.
For a caramelized finish, broil for an additional 3-5 minutes, keeping a close eye to avoid burning.
Let the chicken rest for 5 minutes before serving. Garnish with fresh thyme if desired.
