Ingredients
  

  • 4 pieces Bone-in, Skin-on Chicken Thighs Or substitute with drumsticks or breasts
  • 2 large Navel Oranges Thinly sliced
  • 0.5 cup Fresh Orange Juice About 2 oranges
  • 2 tablespoons Soy Sauce
  • 2 tablespoons Honey
  • 1 tablespoon Olive Oil
  • 3 cloves Garlic Minced
  • 1 tablespoon Fresh Thyme Leaves Or 1 teaspoon dried thyme
  • 1 teaspoon Paprika
  • Fresh Thyme Sprigs for garnish (optional)

Instructions
 

  • Preheat your oven to 400°F (200°C).
  • Lightly grease a roasting pan with olive oil.
  • Season the chicken thighs with salt, pepper, and paprika.
  • In a small bowl, whisk together the fresh orange juice, soy sauce, honey, minced garlic, and olive oil.
  • Arrange the sliced oranges in the roasting pan, then place the seasoned chicken thighs on top.
  • Pour the marinade over the chicken and oranges. Sprinkle fresh thyme over the top.
  • Roast in the oven for about 25-30 minutes, until the chicken is golden and cooked through.
  • For a caramelized finish, broil for an additional 3-5 minutes, keeping a close eye to avoid burning.
  • Let the chicken rest for 5 minutes before serving. Garnish with fresh thyme if desired.
