Ingredients
  

For the sandwich

  • 4 slices slices of bread (sourdough recommended)
  • 1 cup fresh spinach, chopped
  • 1/2 cup sun-dried tomatoes, chopped
  • 1/2 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 2 tablespoons butter
  • Salt and pepper to taste
  • Garlic powder (optional)
  • Fresh basil leaves (for garnish, optional)

Instructions
 

Preparation

  • Chop the fresh spinach and sun-dried tomatoes.
  • In a medium bowl, mix the ricotta cheese and shredded mozzarella.
  • Add chopped spinach and sun-dried tomatoes. Season with salt, pepper, and a pinch of garlic powder, if desired. Stir until well combined.

Cooking

  • Heat a skillet over medium heat. Spread butter on one side of each slice of bread.
  • Place two slices of bread, butter side down, on the skillet. Spoon the cheese mixture generously onto the bread slices, then top with the remaining slices of bread, butter side up.
  • Cook for about 3-4 minutes, or until the bottom is golden brown. Carefully flip the sandwiches and cook for an additional 3-4 minutes or until the second side is golden and the cheese is melted.
  • Remove from the skillet and let cool for a minute before slicing. Garnish with fresh basil leaves, if using.
