  • 1 cup natural peanut butter Use high-quality peanut butter with no added sugars or oils.
  • 1/2 cup almond flour
  • 1/4 cup sweetener of your choice (like stevia or erythritol) Choose a sweetener that suits your taste preference.
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Preparation

  • Preheat your oven to 350°F (175°C) while preparing the dough.
  • In a mixing bowl, combine the natural peanut butter and sweetener. Mix well until fully blended and creamy.
  • Add in the egg, vanilla extract, baking soda, and salt to the bowl. Mix until all ingredients are well incorporated.
  • Gradually stir in the almond flour until the dough forms a consistent texture. If it feels too wet, you can add a bit more almond flour.
  • Use a tablespoon to scoop the dough and form small balls. Place them on a baking sheet lined with parchment paper.
  • Flatten each ball gently with a fork, creating a crisscross pattern on top of each cookie.

Baking

  • Bake for 10–12 minutes or until the edges start to turn golden.
  • Remove from the oven and let the cookies cool on the baking sheet for about 5 minutes before transferring to a wire rack to cool completely.
