Ingredients
  

Dry Ingredients

  • 1 cup almond flour
  • 1/4 cup coconut flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Wet Ingredients

  • 1/2 cup unsalted butter, softened softened but not melted
  • 1/4 cup coconut oil, melted
  • 1/2 cup sugar-free sweetener (like erythritol or monk fruit)
  • 1 large egg
  • 1 teaspoon vanilla extract

Chocolate Chips

  • 1/2 cup sugar-free chocolate chips

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a large bowl, mix together the almond flour, coconut flour, baking soda, and salt.
  • In another bowl, beat the softened butter, melted coconut oil, and sugar-free sweetener until creamy.
  • Add the egg and vanilla extract to the butter mixture and mix until well combined.
  • Gradually add the dry ingredients to the wet mixture. Stir until just blended.
  • Fold in the sugar-free chocolate chips.
  • Use a tablespoon to scoop out the dough and shape it into balls. Place them on the prepared baking sheet about 2 inches apart.
  • Flatten each cookie slightly with your hand.

Baking

  • Bake for 12-15 minutes, or until the edges are golden brown.
  • Remove from the oven and let them cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

For softer cookies, chill the dough for about 30 minutes before baking. Watch baking time closely to achieve the desired texture.
