Ingredients
  

Dry Ingredients

  • 2 cups almond flour Can substitute with coconut flour for variation.
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt

Wet Ingredients

  • 1/2 cup unsalted butter, softened Make sure it is room temperature.
  • 1/2 cup natural sugar substitute (like erythritol or monk fruit)
  • 1 large egg
  • 1 teaspoon vanilla extract

Chocolate Chips

  • 1 cup sugar free chocolate chips

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  • In a bowl, combine the almond flour, baking soda, and salt. Mix well and set aside.
  • In another bowl, cream together the softened butter and sugar substitute until the mixture becomes light and fluffy.
  • Beat in the egg and vanilla extract, mixing until fully combined.
  • Gradually add the dry ingredients to the wet mixture. Stir until blended well, ensuring no lumps remain.
  • Fold in the sugar free chocolate chips until evenly distributed throughout the dough.
  • Scoop tablespoon-sized portions of dough onto the prepared baking sheet, leaving space between each cookie.

Baking

  • Bake for 10-12 minutes, or until the edges are golden brown. The centers might look soft, but they will firm up as they cool.
  • Remove from the oven and let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
