Ingredients
  

Wet Ingredients

  • ¾ cup salted butter, room temperature (regular or dairy-free)
  • 1 ⅓ cup monk fruit sweetener
  • 1 large egg room temperature
  • 1 large egg yolk room temperature
  • 1 tablespoon pure vanilla extract 15ml

Dry Ingredients

  • 2 ¼ cups all-purpose flour (can substitute with gluten-free 1:1 baking blend)
  • ½ tablespoon coarse sea salt see note
  • 2 teaspoons cornstarch
  • 1 teaspoon baking soda

Chocolate Chips

  • 1 ½ cups sugar-free chocolate chips (regular or dairy-free)

Instructions
 

Preparation

  • Gather all your ingredients and ensure your kitchen tools are clean.
  • In a stand mixer or a large mixing bowl with an electric mixer, combine the room-temperature butter and monk fruit sweetener. Beat on medium speed for about two minutes until smooth and creamy.
  • Add the large egg, egg yolk, and pure vanilla extract. Mix until fully combined and smooth.
  • Scrape down the bowl sides as needed.
  • Incorporate the all-purpose flour, coarse sea salt, cornstarch, and baking soda. Mix until a soft dough forms with no dry flour visible.
  • Gently fold in the sugar-free chocolate chips.
  • Cover the bowl with plastic wrap and chill the dough in the fridge for at least two hours or preferably overnight.

Baking

  • Preheat your oven to 350ºF (175ºC) and prepare two large cookie sheets with parchment paper.
  • Using a large 3-tablespoon cookie scoop, scoop the chilled cookie dough onto the prepared cookie sheets, leaving about three inches between each scoop.
  • Bake for 10 to 12 minutes, until light golden edges and slightly underbaked centers are achieved.
  • Allow cookies to cool on the cookie sheets for about 10 minutes before transferring to a cooling rack to cool completely.

Notes
