Dressing Ingredients

Preparation

  • Prepare grilled corn by cooking fresh corn on the grill until lightly charred, about 10 minutes, then let cool and cut kernels off the cob. If using frozen corn, heat thoroughly in a skillet or microwave, then drain excess water.
  • In a large mixing bowl, combine the corn kernels, cooked chicken, diced cucumber, cherry tomatoes, red onion, and cilantro. Mix well.
  • Prepare the creamy dressing by whisking together Greek yogurt, mayonnaise, lime juice, chili powder, salt, and pepper in a separate bowl until smooth.
  • Pour the dressing over the salad mixture and gently toss until everything is well coated.
  • Taste and adjust seasoning as needed, adding more salt, pepper, or lime juice to preference.
  • Chill the salad in the refrigerator for at least 30 minutes to allow flavors to meld.

Notes
