Ingredients

For the popsicles

  • 2 cups fresh strawberries, hulled and sliced Ripe strawberries for best flavor
  • 1 cup plain yogurt (or Greek yogurt for a thicker texture) Full-fat yogurt recommended for creaminess
  • 1/4 cup honey or maple syrup Adjust to taste
  • 1 tablespoon lemon juice
  • 1 pinch salt
  • optional extra berries or nuts For added texture

Instructions

Preparation

  • Wash and hull the strawberries, removing any leaves, and slice them into smaller chunks.

Blending

  • In a blender, combine the sliced strawberries, yogurt, honey or maple syrup, lemon juice, and a pinch of salt. Blend until smooth.
  • For a chunkier texture, blend less to keep some strawberry pieces.

Adjusting Sweetness

  • Taste the mixture and adjust the sweetness with more honey or syrup if needed.

Pouring

  • Pour the strawberry yogurt mixture into your popsicle molds, leaving a bit of space at the top for expansion.
  • Optionally, add whole berries or chopped nuts into each mold.

Freezing

  • Insert popsicle sticks into the center of each mold and place in the freezer for 4 to 6 hours, or until solid.

Unmolding

  • To release the popsicles, run warm water over the outside of the molds for a few seconds.
  • Tap the molds gently or wiggle the sticks to help release the popsicles.
