Ingredients
  

For the cake

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • ½ cup unsalted butter, softened
  • 1 cup milk
  • 2 large eggs
  • 1 teaspoon vanilla extract

For the layers

  • 1 pound fresh strawberries, washed and sliced
  • 2 cups heavy whipping cream
  • ¼ cup powdered sugar
  • 1 teaspoon vanilla extract

Preparation

  • Preheat your oven to 350°F (175°C) and prepare a 9x13 inch baking dish by greasing it lightly and lining the bottom with parchment paper.
  • In a large mixing bowl, combine the flour, sugar, baking powder, and salt. Mix until well combined.
  • Add the softened butter and milk to the dry ingredients. Beat the mixture with an electric mixer on medium speed for about 2 minutes until smooth and creamy.
  • Add the eggs and vanilla extract to the mixture. Continue to mix on medium speed until well incorporated, about 1 minute.
  • Pour the batter into the prepared baking dish and spread it evenly. Bake for 25 to 30 minutes, or until a toothpick inserted in the center comes out clean.
  • Once baked, remove the cake from the oven and let it cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
  • While the cake is cooling, prepare the whipped cream. In a mixing bowl, beat the heavy whipping cream until it thickens. Gradually add in the powdered sugar and vanilla extract, beating until soft peaks form.
  • Once the cake is fully cooled, slice it into three equal layers horizontally.
  • On the first layer of cake, spread a generous layer of whipped cream, followed by a layer of sliced strawberries. Repeat this process for the next layer.
  • Place the final layer of cake on top and frost the top and sides with the remaining whipped cream. Garnish with extra strawberries for decoration if desired.
  • Chill the layered slice in the refrigerator for at least 30 minutes before serving to allow the flavors to meld.

Notes

Use fresh, ripe strawberries for the best flavor. If you find strawberries are out of season, freeze-dried strawberries can be a good alternative. Let the slice sit in the refrigerator to allow flavors to blend wonderfully.
