Ingredients
  

Cake and Ice Cream Layers

  • 1 box vanilla cake mix (plus ingredients required on the box)
  • 1 pint strawberry ice cream
  • 1 pint vanilla ice cream

Whipped Cream and Toppings

  • 1 cup heavy whipping cream
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup fresh strawberries, sliced
  • 1/2 cup strawberry sauce (store-bought or homemade)
  • Optional: additional berries for garnish

Preparation

  • Preheat your oven according to the instructions on the cake mix box. Prepare two round cake pans with cooking spray or line them with parchment paper.
  • Follow the instructions to mix the vanilla cake batter. Pour an equal amount into each prepared cake pan.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, usually around 25-30 minutes. Allow the cakes to cool in the pans for about 10 minutes before transferring them to a wire rack to cool completely.
  • Once the cakes are cool, slice each cake horizontally into two layers, creating a total of four layers.

Assembly

  • Place one layer on your serving platter. Spread a layer of strawberry ice cream on top, using half of the pint. Top this with a second layer of cake and press down lightly.
  • Add the second layer of ice cream, this time using the vanilla ice cream. Follow with a third cake layer, pressing again.
  • Spread whipped cream over the third layer and sprinkle some of the sliced strawberries over the top.
  • Add the final layer of cake and evenly cover the entire cake with the remaining whipped cream.
  • Drizzle strawberry sauce over the top, and use additional berries for garnish if desired.
  • Freeze the cake for at least 4 hours, or until it is firm enough to slice.

Notes

For the best texture, let the cake layers cool completely before assembling. Use a serrated knife for clean cuts when slicing the cakes. You can fold in chopped strawberries to the whipped cream for added flavor.
