  • Water (as per cake mix instructions)
  • Vegetable oil (as per cake mix instructions)
  • Eggs or egg whites (as per cake mix instructions)
  • 1 ounce freeze-dried strawberries (28 grams, chopped) These add concentrated strawberry flavor.

For the Gelatin and Topping

  • 1 package strawberry-flavored gelatin (3 ounces)
  • 1 cup boiling water
  • 8 ounces frozen whipped topping (thawed)
  • 1.5 cups fresh strawberries (sliced) Use as a decorative topping.

Preparation

  • Preheat the oven to 350°F (175°C). Prepare a 9x13-inch baking pan with parchment paper or non-stick cooking spray.
  • In a large mixing bowl, combine the white cake mix, water, vegetable oil, and eggs or egg whites as directed on the box. Mix on medium-high speed for about 2 minutes until light and fluffy.
  • Gently fold in the chopped freeze-dried strawberries.

Baking

  • Pour the batter into the prepared pan and spread evenly. Bake for 30 to 35 minutes, or until the cake springs back when touched lightly. Allow to cool for about 20 minutes.

Making the Poke Cake

  • Once the cake has cooled slightly, poke holes all over the top using a straw or the handle of a wooden spoon.
  • In a separate bowl, mix the strawberry-flavored gelatin with 1 cup of boiling water until fully dissolved.
  • Pour the gelatin mixture evenly over the poked cake and let it seep into the holes.
  • Let the cake cool completely on a wire rack.

Topping

  • Spread the thawed whipped topping evenly over the cooled cake. Cover and refrigerate for at least 4 hours, preferably overnight.
  • Top with sliced fresh strawberries just before serving.

Notes

For a more decadent flavor, consider experimenting with additional toppings like chocolate sauce or mixed fruits. Allowing the cake to chill overnight can enhance the flavor significantly.
