  • ½ cup strawberries, chopped For texture.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C). Grease and flour a 9x5-inch loaf pan.
  • In a large mixing bowl, beat the softened butter and granulated sugar together until light and fluffy.
  • Add the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract.
  • In another bowl, whisk together the flour, baking powder, and salt.
  • Gradually add the dry ingredients to the butter mixture, alternating with the milk, beginning and ending with the flour mixture. Mix until just combined.
  • Fold in the pureed strawberries and chopped strawberries until evenly distributed.
  • Pour the batter into the prepared loaf pan and smooth the top with a spatula.

Baking

  • Bake for 60-70 minutes, or until a toothpick inserted in the center comes out clean.
  • Allow the cake to cool in the pan for about 15 minutes before transferring it to a wire rack to cool completely.

Notes

For best flavor, use ripe strawberries. You can enhance the puree with strawberry extract. Allow the cake to cool completely before slicing to ensure it maintains its shape.
